LESSON
PEAR PIE
In this lesson we are going to learn how to make the fluffiest, cloudlike, pear pie with juicy pear pieces. Get ready, this is about to become your most beloved recipe!
Ingredients:

Dough :
  • Sugar - 60 g
  • Eggs - 25 g
  • Butter - 60 g
  • Salt - 2 g
  • Baking powder - 3 g
  • Flour - 80 g
  • Cream cheese - 25 g
  • Walnut or Hazelnut - 20
  • Almond - 20 g
Filling :
  • Milk - 125 ml
  • Eggs - 20 g
  • Sugar - 8 g
  • Flour - 22 g
  • Corn starch - 8 g
  • Cream cheese - 100 g
  • Midsized pears
  • Blue cheese - 30 g
  • Almond flakes
    Inventory:
    • Silicone Spatula
    • Bowls
    • Kitchen scale
    • Mixer or Kitchen robot
    • Cake mold (18 cm)
    • Biscuit ring
    • Parchment
    • Plastic wrap
    • Aluminium foil
    • Oven mitten
    • Metal stand for cakes
    • Blender
      COOKING INSTRUCTIONS:
      Dough :
      1. Mix together butter and sugar in the mixing robot. Add cream cheese, then slowly add the eggs.
      2. Combine the baking powder and salt with the flour and incorporate it, little by little, with the mixture.
      3. Crush the dried nuts and add them to the dough.
      4. Smear the mold with butter. Use your hands to create the bottom and the "walls" of the pie.
      Custard :
      1. Heat up the milk. Bring it to a high temperature, but don't boil it!
      2. Mix together eggs and sugar until getting a foamy texture. Add baking powder and flour to the eggs.
      3. Slowly incorporate the mixture with the milk. Boil the custard.
      4. Take it off the stove, constantly stirring, then blend it.
      5. Add cold cream cheese and prepare a homogeneous mixture.
      6. Take the molds out of the fridge and evenly distribute the custard, the cheese and the pears.
      7. Sprinkle almond flakes and icing sugar on top. Bake it for 30-35 minutes, depending on your oven.
      8. Take it out of the oven and wait for it to cool down, then take it out of the mold.
