CITRUS CARAMEL
The most tasty, bright cake filling
Ingredients:
  • Sugar - 150 g
  • Water - 40 ml
  • Orange juice - 50 ml
  • The zest of one orange
  • Whipping cream 33% - 100 ml
  • Butter - 70 g
Inventory:
  • Saucepan (with thick bottom)
  • Bowls
  • Silicone spatula
  • Kitchen scales
  • Blender
COOKING INSTRUCTIONS:
  1. In a saucepan, on medium heat, combine water with sugar and melt it until a beautiful caramel color ( you don't have to mix it)
  2. Take it off the stove, add butter (room temperature) and mix well.
  3. Add hot whipping cream to the caramel and don't stop stirring! Be careful, the mixture will boil and splash.
  4. Add orange zest.
  5. If your caramel has lumps, you can wait until it cools down, then blend it. After that, leave it in the fridge. It should have the consistency of thick caramel sauce - perfect for smaller sponge cakes and bento cakes.
  6. Before filling the cake, blend the caramel and pour it into a pastry bag.
  7. If you want, you can add dry nuts to the caramel.
